"How To" Videos

I wanted to offer my readers some videos demonstrating the "basics" that every cook should know. Basic recipes can be added to or varied in many ways, to suit the tastes of the cook and the people who are eating the food they prepare. When we're learning how to cook or just learning how to cook new things, we can all benefit from a culinary jumping off point, if you will. I'm a wee bit camera shy, so I figured that I'd go to the pros to demonstrate some basic how-to's.

How to Hard Boil Eggs
This is not the method that I use to cook hard boiled eggs, but this guy just cracked me up (I know.. I caught the pun after a while but believe it or not it wasn't intended!), so I had to post it! I couldn't find a video that shows my exact method, so I'll add it below this video.



Start with a single layer of eggs in a dry pan and cover them with cold tap water, making sure to bring the water an inch or two over the tops. Add a couple of teaspoons of salt to the water so that if an egg does happen to crack during cooking, the white will not leach out into the water as much. Bring the eggs to a boil over high heat, then turn the heat down slightly and continue to gently boil them for 10 minutes, exactly.

While your eggs are cooking, add a good amount of ice and cold tap water to a large bowl and when the timer goes off, turn off the heat and remove each egg with a slotted spoon to the ice bath to "shock" them. This will stop them from over-cooking and help to prevent that nasty greenish ring around the outside of the yolk. This will also help make peeling them easier.

After the eggs have cooled in the ice water for about 5 minutes, take them out one at a time and gently roll them on a hard surface like a cutting board or clean counter top. Add a bit of pressure with your palm as you roll, till you've "crackled" the shell all over. Place each crackled egg back in the ice bath while you finish the rest. Then fully peel them under cool running water. (by this point, the shells should slip right off!) Place the peeled eggs in a paper towel lined bowl to absorb any excess water. Now, your eggs are ready for whatever preparation you've planned.  Enjoy!

I just had to use this video; simply because this guy is an absolute hoot to watch! He shows lots of kitchen tools, but you can decide what you'll want to purchase to get you started, based on your own individual needs. For instance... If you don't plan to be churning out a boatload of apple tarts any time in the near future, you won't be needing a tart pan. If you do decide to make one later on down the road, you can always purchase one then.
